Let’s Dish! French Toast Peach Cobbler
1. Spray 9 x 13 pan with cooking spray.
2. In pan, combine:
4 cups peaches
1 cup raspberries
1/2 cup sugar
1/4 cup all-purpose flour
3. In a small plastic bowl, melt in microwave:
4 TBSP butter
4. With wire wisk, mix into melted butter:
1/4 cup sugar
1/2 cup orange juice
1 tsp grated orange rind
1/2 tsp cinnamon
1/2 cup liquid egg
5. Take:
6 slices thick sliced bread
6. Dip 1 slice of bread into egg mixture and let soak. Arrange on top of peaches. Repeat with remaining bread slices until peaches are covered.
7. Sprinkle over bread:
2 TBSP sugar
Cooking Instructions: Preheat oven to 350°F. Bake uncovered for 45 minutes or until golden brown. To serve: Once cooked, take a large serving platter, larger than 9 X13, and place it upside down on top of the French Toast Cobbler pan. Carefully and quickly, holding the platter and pan together, flip them so that the toast is on the platter with the fruit on top.
